Simple, tasty BBQ treats. Great served up on a platter alongside some of the other BBQ snacks featured on our blog – like the bacon wrapped onion rings or the giant cheesy moinks.
Watch out for the melted mozzarella which oozes out of the bacon. It can get messy, but who cares when they are this tasty!
These are perfect dipped in a variety of sauces – blue cheese, sweet chilli or your favourite BBQ sauce.
- 2 rashers unsmoked streaky bacon
- 150g buffalo mozzarella
- ½ teaspoon dark brown sugar
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ¼ teaspoon rock salt
- 1/8 teaspoon cayenne pepper
Mix up the contents of the rub.
Neatly wrap the bacon rashers around the mozzarella ball. Then sprinkle the rub around all of the bacon.
Leave to refrigerate whilst you light up the grill. Fire up your smoker to 300°F/149°C, even hotter if you wish as this will help crisp up the bacon. Feed your smoker with a small chunk of wood – a fruit wood such as apple is ideal. When the smoke turns thin with a blueish tint, your mozzarella balls are ready to place on the grate.
Smoke for around an hour, until the bacon has a chance to get a little crispy and the mozzarella starts to melt.
Its that simple!
