A quick and easy snack, these smokey treats are a perfect starter for your summer BBQ.
Cook them long enough so that the onions soften, they will melt nicely into the bacon. As we all know, anything with bacon wrapped around them will taste fantastic!
Tasty on their own, they are also great with a dipping sauce – try a blue cheese dip or BBQ sauce.
Recipe makes four Bacon Rings.
- 1 large white onion
- 6 rashers streaky bacon
- ½ teaspoon dark brown sugar
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ¼ teaspoon rock salt
- 1/8 teaspoon cayenne pepper
Peel the onion and slice into four whole rings. Neatly wrap the rashers of streaky bacon around the onion rings.
Combine the ingredients of the rub, and sprinkle over the bacon.
Fire up your smoker to 250°F/120°C. When you get a steady temperature, add a fist-sized chunk of smoking wood; apple or oak works perfectly with this recipe. Once the thick smoke thins, place your onion rings on to the grill grate.
Cook for 1 hour 15 minutes and serve.
